About the Author
Triant G. Flouris serves as alternate representative of the Republic of Cyprus to the International Civil Aviation Organization (ICAO) and is Director of the Aviation Institute, York College / CUNY, USA. He has served as Director of the International Aviation MBA Program, John Molson School of Business, Concordia University and has held faculty positions at Auburn University, and Victoria University of Wellington. His research and teaching interests include low-cost and legacy airline financial and strategic analysis, aviation economics, strategic management and operations strategy, aviation business modelling, and international aviation governance. Sharon L. Oswald, a Professor and Department Head of Management at Auburn University, holds the Colonel George Phillips Privett Professorship in Business Strategy. She serves as a core teacher in the Executive MBA program and the Physician's MBA and certificate programs at Auburn University. Dr Oswald teaches the capstone strategic management course at the executive, graduate, and undergraduate levels. Much of her research interest lies in strategic international business issues and project management.

For some, dumplings are merely the start of a meal, but in my family they sit at the center of the plate. Whenever we have a family gathering, we make dumplings. When someone leaves for a long trip, we say goodbye with dumplings. When couples get married, their first meal together as spouses may be a feast of one hundred dumplings, because they need at least that many to wrap up all the good fortune we wish upon them.

And of course we make dumplings any night of the week, simply because they taste so good.

My clearest memory from childhood is watching my mother and grandmother at the kitchen table, working together to roll out dough and fold countless dumplings at a time. I was mesmerized by their perfect coordination, shaping each fold with such care and speed. And I couldn’t believe how much food they made out of nothing more than bits of meat, vegetables, and flour.
�
The magic of eating dumplings was always the surprise of that first bite, a burst of juicy filling and eye-popping flavor that caught me off guard, even though I had seen everything that went into the wrapper. At an early age I had already learned that dumplings spur not one but two kinds of joy: making them, with all the hands in the house around the table, and eating them, for that unexpected moment of delight.

Everything I have today I owe to dumplings, and they have always meant more than just a good meal. I grew up during the Chinese Cultural Revolution in Tianjin, a northern port city just southeast of Beijing. When I was very young, the authorities sent my father to a labor camp for daring to speak out against corruption in the local government, which left my mother to raise my brother and me by herself. When I was twelve years old, she decided I was old enough to take the train alone to visit my father at the camp. That morning, she and I made a special batch of dumplings that I carried with me—one of the only comforts of home we could share with him. His eyes lit up when I pulled those dumplings out of my bag—and every time after that I brought a batch on my visits. No matter how hard his life was, I took comfort in knowing that he could always look forward to another batch.

In 1989, I moved to New York to pursue my second college degree, and a few years later I fell in love with a man I met, of all places, in a restaurant. We had our first of three children together in 1997, and after I graduated I became an accountant. I had a good life and a good job, and in a parallel universe I know there’s a Helen who still enjoys that simple life and gets far more sleep than I do now. But a part of me always wanted to be my own boss, so in 2007, with my family’s encouragement, I opened a tiny stall in a steamy underground food court in Flushing, Queens, New York’s most bustling Chinatown. Surrounded by noodle shops and wonton slingers, I naturally made dumplings in the hearty, rustic style of those found in my home city—from scratch and with the freshest ingredients I could find from the nearby markets.�

Opening day was slow. We sold all of 150 dumplings—only to local Chinese customers—and business stayed sluggish for a while. But soon, word began to spread, and more people lined up for one of the ten seats at my stall. My original menu had only three kinds of dumplings, and after customers worked their way through those choices, they invariably wanted something new. So I kept developing different flavors to keep them coming back, both with the northern Chinese flavors of home and all the new ingredients I’d find in the American groceries.

My customers also grew more diverse. Encouraged by everything from the New York Times, which profiled the food court that housed my stall, to Anthony Bourdain, who featured a neighboring vendor on his show No Reservations, people from all over New York started taking hour-long trips on the subway to explore Flushing’s food scene, and suddenly I was feeding a clientele who claimed they’d never tasted anything like my dumplings before.

Eventually I earned enough to open a full-service restaurant of my very own, an embassy to Chinese dumplings called Dumpling Galaxy, where I could finally offer every kind of dumpling I’ve ever dreamed of. My restaurant’s Chinese name literally translates to “One Hundred Kinds of Dumpling Garden,” and yes, you really will find one hundred different dumplings on the menu. They include classic recipes, like my mother’s favorite ground pork with garlic chive, as well as others I’ve developed, including lamb with summer squash, beef with Indian curry powder, cabbage with snappy wood ear mushrooms, and muscular dried octopus. And I haven’t stopped dreaming: I’m still developing new flavors all the time.

A little universe of dumpling recipes

This is a charming little cookbook--nicely designed, even witty in its endpapers and illustrations. The recipes are well written, easy to understand, and in many cases illustrated in a series of how-to photographs. Helen You and her co-writer Max Falkowitz want you to learn about making dumplings from scratch--no previous experience is necessary. That doesn't mean that making dumpling dough is easy--we found that it is not. It takes strong hands, lots of time and patience, but the fillings are light and tasty and we think that with practice making the dough and shaping the dumplings will get easier. Meanwhile, you'll have fun. (If you're in NYC, do take the 7 train to Main Street Flushing to Mrs. You's restaurant. It's a treat!

This is the only dumpling cookbook you will need.

This cookbook covers every kind of classic dumpling and then some new combinations. Very clear directions on making dough, rolling and forming dumplings. Form also indicates cooking method either steaming, simmering, or pan fried. Clear instructions for cooking are given. Fillings are both meat and vegetarian. Desert dumplings and a variety of dipping sauce recipes make this a absolutely complete cookbook.

Only regret is there isn't a negative star rating, and buying this book.

I've been cooking for just over 15 years and have yet to experience a level of frustration, waste, and rage in response to cookbooks that I have experienced after trying to follow this cookbook. I cook Chinese and Japanese traditional recipes very frequently and have spent months in each country traveling sampling food and cooking.

While it is to be expected that most professional chefs publishing cookbooks do not actually publish the entire recipe I have to say just about every single measurement in this cookbook has been grossly off. The quantities of flour required for the dough is completely off unless you want a superglue like pancake batter for a dough mix, the cooking methods of using flour, vinegar, and water to pan fry you need to keep in mind the size of the pan they're probably meaning for you to use is about a single or double egg frying pan size it's supposed to be TINY. I cooked it following the "fill up to 1/3 of the dumpling" method referenced and it took almost 20 minutes to cook off the liquid because once you pour the slurry in you're dedicated, the liquid turns into a film of something like watered down elmers glue which you have to cook off to be able to eat it.

Long story short I ended up after 4 attempts to make different dumplings with 4 pounds of garbage I wouldn't feed a dog because the boiled dumplings were filled with raw pork and disintegrated noodle wrappers and the pan fried ones were so burnt to the pan that I had to soak the pan overnight to get it completely out. I just ended up pan frying it with a little sesame oil ,vinegar, and water and placing a lid over it to steam the top and sides in order to salvage the last shreds of food. Instead of this buy Phoenix Claws and Jade Trees, Breath of Wok, or Every Grain of Rice.

Excellent book

Many books come across my desk as a department chair, and I send most to junior faculty to read. I held on to this one because I couldn't put it down. Very well written. Flawlessly edited. Full of content and references to business. In my last book about leadership In Extremis Leadership: Leading As If Your Life Depended On It (J-B Leader to Leader Institute/PF Drucker Foundation) I wrote about high performing teams in high risk contexts. But Guttman's book has much broader applicability and is laser focused on teams--it will soon be a classic among leaders and managers. It's the best book I read all summer. Great Business Teams will find its way into my classroom, but I'm even more excited about applying the ideas in this book to the teams that I help lead. This one's a gem. Tom Kolditz

Stories and advice from an echo chamber

Howard Guttman, author of Great Business Teams: Cracking the Code for Standout Performance, heads a consulting firm that "specializes in building high performance teams." That is both the major strength and the major weakness of this book.

The strength is the stories about real business teams. The book gives you examples of effective teams in action. If that's what you're looking for, read no farther. This book is worth your time.

The major weakness of this book is that you're getting reports from an "echo chamber" where the author and his clients speak, reinforcing each other. But there are no independent or outside voices to be heard. There is no reality check about the effectiveness of recommendations.

According to Guttman, the book is "based on our work with and in-depth interviews of, 39 senior executives from 25 organizations." That causes at least three problems.

The book is only based on the work Guttman's firm has done. Decades of robust research into effective, high-performance teams have no place here. So you will not find out about effective teams sizes, for example, or the special situation of temporary teams and task forces.

The book is only based on conversations with Guttman's clients. You're getting what's worked for Guttman's firm in a subset of their engagements. You won't find stories of what didn't work. You won't find examples from outside the echo chamber.

The interviews are only with senior executives. Not with frontline workers. Not with analysts. You will not get those views of reality. For example, you will have to go elsewhere to discover that one of the companies featured in the book saw its stock drop 90 percent from the time Guttman's firm was working with them until the book's release.

Finally, the "code" that Guttman has claimed to "crack" doesn't seem very code-like. The initial chapters of the book seem to call for the same thing that many other books by consultants call for: a different kind of leader; a different kind of follower; and alignment. Later chapters, beginning with chapter 6 titled "How Great Teams Make Decisions," are more process oriented and helpful if you're looking for some step-by-step ideas to try.

Throughout Great Business Teams, you'll find descriptions of business teams at work. Since most of us learn best from stories and examples, this is where the value of book lies. But there's no reality check to help you figure out how good the advice is.

It is sometimes those books and articles which bring business leaders back to basics that seem to have enduring impact. Great Business Teams is the kind of book that consultants, managers and executives will be referencing for years to come because it is both informative and well written. While we have all suffered through team situations that lacked the appropriate protocols, Howard has identified those that are key to achieving higher performance. I still can't believe he got so many executives to admit to their growing pains.
